I found PlayOnLinux, over the past several years, to be a great front end for WINE. I believe VM comes with the cutter so if you have no issues running Wine VM would by my preference over Inkcut. I do have a linux box and occasionally run Vinyl Master on it using Wine, but I have not tried to cut with it yet. If you use the serial port on the cutter you don't need a driver and there's no reason you wouldn't be able to cut from linux.
